I’m finally getting around to writing this post that I’ve been meaning to write since winter. I’m obsessed with soup every Winter but usually make one every week in the summer too. Of the hundred or so soups I tried this winter, these are easily my favorite. Each one is super tasty, easy to make, and is filling without too many calories. Give them a try!
- Chicken Enchilada Soup – From Tried and Tasty: Enchiladas are one of my favorite meals and this soup is like a full meal in a bowl. I always make a large batch and feed my family for a couple days: one bowl is filling enough for even my huge husband.
- Chicken Posole in the Slow Cooker – Form Love Bakes Good Cakes: The slow cooker makes for some nice tender chicken and rich flavors. For a super easy slow cooker recipe you won’t believe the amazing taste!
- Sicilian Chicken Soup – From A Dash of Sanity: Another meal in a bowl with an Italian spin. This recipe just uses a whole chicken so it has a ton of tasty chicken in every bite. Mmmm, so good.
- Tomato Noodle Soup – From Around My Family Table: This is the easiest on the list. You can have tasty tomato noodle soup in under 20 minutes! This is a lunch staple in my house.
- New England Clam Chowder – From Wine and Glue: This has got to be one of my favorites. The perfect creamy base and chunky crab makes for the perfect chowder. Better than restaurant clam chowder and easy to make too!
- Slow Cooker Meatball Soup – From Mommy Hates Cookies: This soup goes great with some thick bread or pita chips. Some of the tastiest meatballs I’ve ever had.
- Roasted Parsnip Soup – From Foodness Gracious: Now for something completely different. This soup uses parsnips which are something I don’t use often, but what a great combination of vegetables!
- Lasagna Soup – From Eazy Peazy Mealz: I love a good lasagna, but this soup is even better in my opinion. All the taste of lasagna but a bit lighter and easier to make.
- Vegetable Beaf Barley Soup in the Slow Cooker – From Valerie’s Kitchen: Beafy soup in the slow cooker, what could be better?
- Chicken Tortilla Soup – From Self Proclaimed Foodie: You might think this one will taste exactly like the Chicken Enchilada soup from number 1 but you’d be wrong. Still a great, filling soup but a little lighter and more spicy (in a good way)
